Granola with flax... Great for staying regular!

I have tried everything to stave off the constipation get effects of narcotic pain meds. This is hands down the best cure! I eat about 3/4 of a cup for breakfast with berries and almond milk. It's the flax that keeps you regular.

We play around with this recipe. You can change quantities as long as the total volume remains the same. I love it with pumpkin seeds, sunflower seeds and cinnamon. My husband is a big fan of pecans. The same thing with sweeteners. We use honey and pure maple syrup, but you could use sugar or brown sugar if you can eat those.

8 cups oats
1/2 cup hemp seeds
1/2 cup golden ground flax seeds (can use whole seeds)
1 cup sunflower seeds
1 cup shaved almonds (whole are too hard after cooking)
1 cup chopped pecans
1 cup pumpkin seeds
1 1/2 teaspoon salt
3/4 cup maple syrup
1 cup honey
1/2 cup coconut oil (liquid)
1 tablespoon ground cinnamon
1 tablespoon vanilla extract

Preheat oven to 325 F (165 C)
Line two large baking sheets with parchment or aluminum foil
Combine oats, nuts and seeds in a large bowl
In a sauce pan combine honey, syrup, (or sugar), oil, cinnamon, salt, & vanilla
Bring to a boil over medium heat.
Poor over dry ingredients, stir to coat
Spread mixture evenly on baking sheets
Bake until crispy and toasted, about 20 minutes.
For flaky granola, stir once halfway through baking
For clumpy granola (my preference!) smoosh the wet granola into mounded rows on the baking sheet before baking.

After it cools, you can stir in dried fruit of your choosing. Enjoy!
