So today is probably gonna be rough. It's already starting bad. Pain is everywhere. Internal external so if u guys woudn not mind telling me what is od for meals when ur pain is is a9 I needs enough to feed four people at least. Fhnaks
Hey. I've found that batch cooking is the best method. It does rely on having a good day though....and a huge freezer! The slow cooker recipes are great. Chuck it in and it does the rest for you. If you're interested can post my favourite. ..Mexican lime chicken. Super easy. Then I (or the Mr if I'm not up to it) shred the chicken and ziplock or tub it up in portion sizes. It freezes really well! Spag bol works great too. I've been poaching chicken breasts and freezing them too...put it fridge overnight and then just micro with some passata or what ever. Did you know you can even freeze cooked portions of spaghetti???
Pork joints and beef stews etc great in slow cooker too!!
Thanks guys.. Keza yea..I'd love the recipe for the lime chicken... I've done batch cooking several times. Ha..the thing is eveeytime I do a batch family goes in on all dishes made and were down to like one days worth of meals left.. Ha.. But yes having that good day is like a diamond in the rough. Today was extra hard. I ended up.breaking down during the meal prep. I just couldn't deal anymore. Mostly it was an emotional break. I've been told for last few days that three was no Money for my medication. But yet thers money to get random food items and stuff for dad. So its like I'll just have e to suffer in pain and keep going whike others are tended to. Basically mom ended up finishing lunch which was basically done. But I still had to make my own plate. So now I'm just mixing medicine to try and get through the another night. At this point I just want to stop dealing. But..😃 sorry went a lot dark. I'm just hurting so bad today. It's been months since I've been In tears with pain. But I'll try all your ideas. Thanks k you
When I feel bad, I normally make tuna casserole, without the oven... I take the soup chesse and tuna mix them in a bowl and nuke it for about 8-10 mins while noodles are cooking (wheat egg noodles) and for my family of 5 it lasts a couple of days! Once the noodles are done I mix the 2 ingredients and dinner is done!
Bless you. I'm sorry you're in pain and are struggling to get the support that you require from your family at the moment. It sounds very frustrating!
Mexican lime chicken:
Whole chicken breasts
Lime juice, (fresh squeezed if you have a capable helper :) bottled if not)
Fresh cilantro - masses of it!
Sweet bell peppers
I haven't put quantities in as it all depends on how big the slow cooker and how much chicken your using. But as long as the pasatta comes 3/4 way to covering the chicken the rest it down to personal preference. I then leave the slow cooker on for 8-12 hours. Low setting. The chicken just falls apart when done and I like it shredded with a fork!
Prob my favourite recipe. Can micro some express rice. You can add pulses like kidney beans etc to it in the slow cooker if you like. I can't anymore as have noticed these trigger my IBS quite badly. Shame as they're super yummy!

Moparmom..I love leftovers too..however I'm stil working on my dad. He is 80 yes old and from the old school large family. So he hates leftovers. With a passion.. I've got to trick sometimes. Lol make it so I can change or add a sauce somhe thinks its a new item .lol
Take one or two 4 lb roast, we used beef. Coat both sides with taco seasoning wrap in saran wrap over night. In morning put in crock pot and cook on high for 8 hrs pour a whole jar of picante sauce and leave until done. When done shred for tacos, nachos, or burritos. We love it serve with shredded cheese, sour cream
Whole foods like any meat roasted 425 10-25min depending on meat. Cut up veggies and roast w it for 20 min. For flavor olive oil and nice salt w garlic we and onion mmmmmm we also do steam pack veggies. W fish 10min to table!
I'm a crock pot queen. If I wake feeling bad or if I know there's a flare coming on, I throw stuff into the crock pot.... Beans or soup stuff or chicken breasts, chuck roast and veggies and boullion and just go back to bed. Dinnertime is a matter of throwing in noodles or rice or just serving it up.
I have a couple ideas.. -If steak is on sale, grab some, salt and pepper it, stick it in the oven at a broil for 2 min 30 sec or 3 min on each side. Tastes deliscious, not too much work either. -Ground beef and fried rice. Save bacon grease, or use butter. Put rice and spices, plus butter in a pan. Cook until browned. Make ground beef with salt, ginger, onions, carrots, and basil. Throw together when done. -You can do roasts in a rotisserie (only realistic if you eat a TON of meat like my family. We get 20-40 lb boxes of beef each month) Get a beef chuck or large cut of pork, salt it, leave it in the rotisserie for a couple hours,or until it is the right temperature to be safe to eat. Cut, and serve. -Crockpot or stove soup. I love split pea soup, and the basic chuck roast plus veggies and spices. Really easy, and in bad pain days I can usually convince my family to help. -I have also developed a great gluten free cornbread. My family loves it 1 cup milk (I use rice milk) 1 1/3 cup corn meal 2/3 cup rice flour 1/4 cup honey 1/4 cup sugar 1/4 cup olive oil (or butter) 1 tablespoon baking powder 1 teaspoon salt 3 eggs (or egg replacer eggs)
