This is the pumpkin carving we did at my sisters last Wednesday....my daughters is the first one on the left then my son's, my one us the middle, my brother-in-laws is the next then my 3 year old nieces' one altho with help from my sister when she got bored of cleaning out the inside!
Usually once they are gutted they get cut so they fit in a roasting pan. bake covered with a little water at 350 for 45+ minutes until the inside flesh is easily pierced with a fork. Then remove from oven and let cool until you can handle it. then scoop the flesh into a blender and puree it. don't put the skin in. Once pureed you can add it to all sort of recipes. I have been doing pumpkin smoothies for breakfast. pumpkin, vanilla vegan protein, rice beverage, nutmeg and cinnamon. Yumm.
I've never tried it like a potato or butternut squash but it's a winter squash so I'm guessing you could. Pumpkin is strong flavor, don't know if I'd eat it plain. it's usually paired with cinnamon, nutmeg, cloves or allspice.
